When I tried kaju katli recipe, I made no sugar syrup version, so this time for badam katli recipe I wanted to try making the sugar syrup. It turned out so delicious and soft just like what you get in shops. Thin katlis just like shop bought ones, tasted so yummy and I was very happy.

To make badam katli recipe we need to blanch and peel the almonds. Only when made with peeled almonds katli turn out soft. next important point is to stop cooking at the right time. remove the katli mixture immedietly from heat once it turns into a soft mass. Even if you cook for few extra minutes the katli will turn hard. To get smoth finish and soft katli, we need to stop cooking at the right time and knead the warm mixture very well.

Step by step badam katli recipe.

1. Blanch almonds in boiling water for 5 minutes. peel the almonds.

2. Dry roast the almonds for 2-3 minutes to remove the moisture.

3. Grind the almonds very well without adding water.

4. Heat a pan and add 1/2 cup of sugar + 1/4 cup of water. Make one string sugar syrup. It will take around 3-4 minutes to reach one string consistency. Add saffron strands to the sugar syrup and mix well.

5. Keep the flame low and add almond powder. Mix well quickly.

6. Cook in low medium flame until the mixture turns to a soft mass and leave the sides of the pan. It will take around 5-7 minutes in low flame.

7. Quickly remove to a bowl. Allow it turn warm. Knead the katli mixture very well. Knead it until turns smooth and soft.

8. Roll into a circle of desired thickness on a butter paper.

9. Cut into squares or diamonds. Store badam katli in airtight box.
