rava uttapam recipe | instant suji uttapam recipe | sooji uttapam with step by step photo and video recipe. uttapam recipes are the traditional dosa variety from the popular south indian morning breakfast cuisine. it is typically made with specific dosa batter or idli batter which includes batter grounding and batter fermentation. but there are some cheat version of it which is made instantly without the overnight hassle and rava uttapam recipe is one such popular variation.

as i explained earlier, there is no hassle of fermentation and grounding. the rava or sooji batter is made by mixing yoghurt, spices and salt. the traditional instant suji uttapam recipe is made with grounding and overnight fermentation, but this recipe post skips all those steps. moreover, i have not added any fermenting agent like baking soda and eno fruit salt. these agents typically help to hasten the fermentation process which can also be added to this batter. but i have specifically avoided as it is not required particularly for this recipe. the combination of semolina and curd makes the batter ideal for dosa recipes.

furthermore, i would also like to highlight some tips, suggestions and variations for this instant suji uttapam recipe. firstly, i would heavily recommend using medium-sized semolina or bombay rava for this recipe. do not use bansi rava or thin sized semolina and it can mess up the batter and dosa making process. secondly, the choice of toppings can be varied and you can mix up any your choice vegetables. however, ensure to chop these veggies very finely so that it can be easily topped for these pancakes. lastly, i have shaped these uttapams in mini shaped disc which is not a requirement. you can shape it any required and there is no strict on it.

Ingredients

for batter:

  • 1 cup rava / semolina / suji, coarse
  • ½ cup curd
  • ¾ tsp salt
  • ½ cup water

for toppings:

  • 1 onion, finely chopped
  • ½ capsicum, finely chopped
  • 1 carrot, grated
  • 1 tomato, finely chopped
  • 2 tbsp coriander, finely chopped
  • 1 inch ginger, finely chopped
  • 1 chilli, finely chopped
  • few curry leaves, chopped
  • ¼ tsp salt

Instructions

  • firstly, in a large bowl take1 cup rava, ½ cup curd and ¾ tsp salt.

  • mix well making sure the curd is combined well.

  • further, add ½ cup water and mix well adjusting consistency.

  • rest for 20 minutes or until the rava absorbs well.

  • check for consistency adding more water if required.

  • now prepare the vegetable toppings, by taking1 onion, ½ capsicum,1 carrot and 1 tomato.

  • also, add 2 tbsp coriander, 1 inch ginger, 1 chilli, few curry leaves and ¼ tsp salt.

  • mix well making sure everything is well combined.

  • now pour the rava batter into small uttapam.

  • top with a tbsp of prepared toppings and press gently.

  • pour 1 tsp oil around the uttapam.

  • cover and cook for a minute or until the base is cooked well.

  • flip over and cook both sides.

  • finally, enjoy instant rava uttapamwithtomato sauceorcoconut chutney.
